So I stumbled upon this recipe called “Russian Cottage Cheesecake” and apparently there are different versions of this all over the internet. They have different variations of this cake using cottage cheese in many different countries. In Sweden for example they have this very same recipe but they add heavy whipping cream and it looks great but it’s not coming in under the fat grams I was shooting for. Well I was looking for a healthier summer type dessert and I was like why not try it? The ingredients in this cake are simple and I have them all on hand just about all of the time maybe this is why this cake is a staple in Russia and now in my home 😉
All you need is eggs, cottage cheese, sugar, flour, graham crackers, and lemon juice or zest.
6 ingredients and some fresh fruit on top and you have yourself a winner.
So I made this for our Fathers Day dinner and everyone said it was very good. My first thought when I bit into it was “Wow, this is quite nice!”….its not a knock your socks off recipe but it’s good, it’s dessert, it’s healthier and it’s easy!
A year ago if you would have told me I would be eating Cottage Cheesecake I would be like no way………
This isn’t my recipe but you could modify the recipe some. I have found variations on Allrecipes.com to add cinnamon and butter in the crust you could if you wanted to add more fat. I also read that you could add vanilla or nutmeg to the custard portion. Also I have seen this recipe on the web where they used egg beaters instead of real eggs if you have any issues with eggs.

We had a wonderful day today celebrating Fathers Day with my Dad and my husband! If you do try this recipe let me know what you think!
